Mushroom and paneer pulao
A Combination of mushroom and paneer pulao is a high protein dish.
Mushrooms also contain more of digestible protein than cereals and pulses, though than meat, so, make mushrooms a part of your diet.
2 cups basmati rice, 16button mushrooms,5 tbsp. ghee,250 gm. paneer, cubbed,4 small sticks chinnamon,4 green cardamoms, 4 cloves,5 pepper, 2 large onion, sliced fine. 1 tbsp ginger garlic paste,1/4 cup tomato paste.2 tbsp tomato paste. 2 tbsp cashew paste. 1 tbsp garam masala powder, salt to taste, 4 cups water, 1 tbsp. chopped coriander leaves, 1 tbsp. chopped mint.

Wash and soak rice for 20 minutes. Wash and pat dry the mushrooms.
Mushroom: Heat 2 tbsp . ghee in a pan . Season with the whole garam masala, pepper corns and pay leaves, all a little crushed. Whenthese turn a shade darker and become fragrant, add half the sliced onion and fry till golden. Add the ginger garlic paste and tomato paste and fry till you see flecks of fat around the surface.
Mix the mushroom, paneer and garam masala powder. Stir and add cashew paste, a cup of water and salt, stir carefully to mix and simmer on a slow fire till there’s thick gravy.
Rice : Heat the remaining ghee in a pan . Fry the rest of the onion till golden. Drain and add the rice. Fry till the rice turns opaque. Stir in 4 cups of hot water and salt. When it coes to a boil, cover and reduce heat. When the water reaches the level of the rice , put a tawa underneath and cook till the rice is done and water absorbed.
To assemble: Take a vessel. smear a little ghee. Layer 1/3 of the rice . Tp with half the mushroom mixture. Sprinkle a little of the coriander and mint leaves. Do once more likewise. Cover with the remaining1/3 of the rice. Cover tightly and put on dum, keeping a dawa underneath for 15- 20 minutes.
