Tomato and orange soup
Tomato and orange soup is thick, smooth and creamy without any cream at all. Soup contains a high quantity of water that nourishes your body cells and keeps your skin fresh. High in fiber , help your digestive system healthy and prevent bloating and constipation.
4 larege Tomato
1 large onion,finely chopped.
11/2 tbsp butter ,
250 gm lentils,
Salt and freshly ground pepper to taste.
2 tsp. sugar,
2 tbsp. very finely chopped fresh coriander.
1/2 cup tomato puree.
Peel, deseed and very finely chop the tomatoes. Grate the rind and take out the juice of the orange.
Saute the onion in butter in a pressure cooker. When the onion turns soft, but not browned, add the lentils.
Quickly stir for few times and add the vegetable stock, salt, pepper, sugar and fresh coriander. Cook for 10 minutes after the cooker reaches maximum pressure, open cooker after it cools naturally.
Add the chopped tomatoes, puree , grated rind and juice of the oranges. Stir well and cook over moderate heat for 15 minutes. It is a semi thick soup . Serve hot , Garnished with cream, If using. Healthy , tasty, soup is ready.
