Ginger Thokku
Ginger Thokku is a South Indian spicy recipe made with fresh ginger,tamarind, jaggery,and spices.It pairs well with Idly , dosa, curd rice or even plain rice with ghee. Ingredients
- Fresh Ginger – 1/2 cup (peeled and chopped)
- Tamarind – 1 tablespoon (soaked in warm wate )
- Jaggery – 2 tablespoons (adjust to taste)
- sesame oil – 2 tablespoons (gingelly oil)
- Mustard seeds – 1teaspoon
- Fenugreek seeds – 1 teaspoon (dry roasted and powdered)
- Red chili powder- 1 teaspoon (adjust to spice level)
- Turmeric powder – 1/4 teaspoon
- Salt – to taste
- Water as needed
How to prepare?
1.Saute the ginger
- Heat 1 tablespoon sesame oil in a pan.
- Add the chopped ginger and saute until it turns slightly golden and fragrant.
- Let it cool.
2.Grind the mixture
- In a mixer,grind the sauteed ginger along with soaked tamarind,jaggery, and a little water to form a smooth paste.
3.Prepare the thokku
- Heat the remaining 1 tablespoon of sesame oil in the pan
- Add mustard seeds and let them splutter.
- Add the ground ginger paste, red chili powder, turmeric and salt.
- Cook on low heat until the mixture thickens and the oil starts to separate
4.Add fenugreek
- Add the roasted fenugreek powder and mix well.
- Cook for another 2 minutes and turn of the heat.
5.Storage
- Let it cool completely before transferring to an airtight glass jar.
- It stays fresh in the refrigerator for up to 2 weeks.
