How to make kambu (bajra) recipes?
1.KAMBU IDLY

Ingredients
- Kambu – 1/2 cup
- Idly rice -1/2 cup
- Urad dal -1/4 cup
- Flattened rice (aval)- 1/4 cup
- Fenugreek seeds- 1/4 tablespoon
- Salt – to taste
Preparation
- Wah the kambu and idli rice well and soak them separately for 5 hours.
- Mix the urad dal and fenugreek seeds and soak them for 3 hours.
- Soak the aval (flattened rice) separately for 1 hour.
- Mix all the ingredients together and grind them in to make idly flour and leave them to ferment for 8 hours.
- Pour the fermented flour pour into an oiled idly plate and let it raise for 10-15 minutes.
2.KAMBU VADA

Ingredients
- Kambu flour – 1/2 cup
- Roasted chana flour- 1/4 cup
- Onion – small
- Green chili – 2 to 3
- Fennel seeds – 1 teaspoon
- Ginger 1 inch
- Coriander leaves
- Mint
- Ghee- 1/2 tablespoon
- Oil – for fry
- Salt – to taste
Preparation
- Chop the onion, ginger, and green chili.
- Place the pan on the stove and fry the kambu flour.
- Remove from the stove and let it cool.
- Add roasted chana flour, chopped onion, ginger fennel seeds, mint leaves, coriander leaves, ghee and knead until smooth.
- Place the pan on the stove and add oil. When oil is heated flatten the dough into vada and cook on both sides
