Ingredients
- Brinjal – 1/4 kg
- Red chili – 5 to 6
- Coriander seeds – 1 tablespoon
- Ground nuts – 1 tablespoon
- Garlic cloves – 6 to 7
- Fenugreek – 1/2 teaspoon
- Cumin seeds – 1teaspoon
- Fennel seeds -1 teaspoon
- Salt to taste
- Oil (as need)
- Curry leaves 1 string
Method step by step

1.cut the brinjal

- Wash and cut the brinjal x shape like in the picture.
2.Roast spices

- Heat in a pan, add red chili, ground nut, coriander seeds, fenugreek, cumin seeds, garlic and roast them without oil.
3.Blend the masala

- Roasted ingredients transfer into a blender and powder them.
4.Stuffing

- Now stuffing in the prepared masala powder to all the brinjals keep a side.
5. Add excess masala

- Heat oil in a pan, when oil heated add stuffed brinjal, excess masala powder and mix well.
6.Roast brinjal

- Then roast for 15 to 20 minutes.
Serve
- Serve with hot white rice.
