Kavuni Arisi Halwa recipe
Kavuni arisi halwa is a traditional South Indian dessert made from karuppu kavuni arisi. This recipe is very popular in TamilNadu and Chetti Nadu cuisine. Black rice is called karuppu kavuni rice in Tamil. It has a very rich chewy texture and a deep purple hue. why this recipe uses this kind of rice, because that rice has lots of medicinal values. Karuppu kavuni rice has been used for its healing properties for centuries. In the past, it was considered a luxury that only kings and the wealthy could use.
How to make
Ingredients
- kavuni rice – 1 cup (black rice)
- 3 cups water ( for cooking)
- 1 cup sugar ( adjust to taste)
- 1/4 cup ghee
- 1/4 cup grated coconut(optional)
- 1/2 tsp cardamom powder
- 10 cashews (roasted in ghee)
Instructions
Step 1 : soak the rice
- First wash kavuni arisi and soak it overnight ( at least 8 hours ) for better cooking
2. Cook the rice
- Drain and add the soaked black rice to a pressure cooker with three cups of water.
- Cook for 6-7 whistle or until the rice is soft and mushy
3. Mash and add sweet
- Mash the cooked rice well and transfer in to a pan.
- Add sugar and mix it well. The mixture will become slightly watery as the sugar melts.
4. Add ghee and Cardamom
- Stir continuously and add ghee little by little until the halwa thickens.
- Add cardamom powder and grated coconut for extra flavor.
Step 5
- Fry cashews in ghee and add them in to halwa.
- Stir well and cook until the halwa reaches a glossy consistency
Serve and enjoy
- Serve it warm or let it cool and storing in an airtight container.
